Aluma is a French Bistro that has been around for 12 years. Its current owner, Alaa, bought it from its previous owners, for whom he worked as an accountant. The restaurant’s façade is modest, almost hidden amongst the street houses; entirely contrary to the powerful experience awaiting diners indoors. Here, inside a pleasant space imparting soft prestige, guests can challenge their pallets with a variety of tastes that combine principles and methods of French cuisine gourmet-cooking with choice local products and Mediterranean influences.
Guests are welcome to sit by tables covered with tablecloths, set with cutlery and tableware, and taste the butcher’s cut served on a bed of black lentils, a dish that left our pallets with a feeling that reminded us of the tremolo of the Muezzin heard from the picturesque market of Tarshiha. Another promising dish is the chicken livers with grill singed onions and a potato puree in chicken stock and Marsala; and the excellent desserts are truly surprising.
